When a child is diagnosed as having food allergies, the information provided typically focuses on the specific foods to avoid or to REMOVE from the diet. Little counsel is offered to ensure that nutritionally sound replacement foods are incorporated into one’s diet.

It sounds fairly simple, “What is taken out, must go back in via replacement foods”. However, many families challenged by food allergies are in a struggle not knowing whether an allergic individual’s restricted diet is meeting the daily requirements of a balances diet.

In addition, ELL has received widespread feedback from both families as well as schools regarding the enormous struggle today in providing “safe” allergy-free meals to students.

ELL recognizes this growing need for assistance with dietary assessments and menu planning by specialized and licensed individuals and assistance in cafeterias across the country in providing “safe” allergy-free menu options to food allergic students.

As a result, ELL is managing the first and only nationwide network of Food Allergy R.D. Consultants who are trained and certified to support the Protect Allergic Children (PAC) Program.

Services to be provided by R.D.s as part of the PAC Program will include assistance with safety in the cafeteria and menu planning as well as counsel on individualized nutritional programs and maintenance plans for families struggling with diets restricted by food allergies.
